I am avocontrol!
I used to boycott avocado toast, mainly because I'm that unicorn that does NOT like avocados. *shrugs* However, recently I gave it shot - didn't like it. lol Then I hooked it up home, and I've been eating this toast every morning for a freaking week straight now.
Stuff You Need
PREP - 15 mins
COOK - 10 mins
SERVINGS - 2 to 4
- 1 avocado, pitted + peeled
- 1/4 cup roasted garlic hummus
- 1 jalapeno, seeded
- 1/2 lime, juice
- 1 lb lump crab meat
- 2 tsp smoked paprika
- 1 tsp cilantro, chopped
- 1 tsp whole ground mustard
- 2-4 slices toasted bread
- 2-4 pieces cooked bacon
- pickled red onions*
- thinly sliced cucumbers
- lemon pepper aioli*
- broccoli sprouts
salt + pepper, to taste
COOK IT LIKE THIS
In a food processor, combine avocado, hummus, jalapeno, and lime juice until smooth. season to taste. Set aside.
In a bowl, mix together crab meat, cilantro, mustard, smoked paprika. Set aside.
Now lets make this freaking toast!!
Grab that glorious toasted bread of yours and lather it with some (or all, I won't judge) of that yummy avocado spread.
Then top it with a boat load of goodness. There's no right or wrong way to get this done.
I like to spread the toast with avocado, top with cucumber, pickled onions, bacon, crab salad, lemon pepper aioli, then broccoli sprouts. Pure Yum!
Pickled Red Onions - combine 1 thinly sliced red onion, 1 cup red wine vinegar, 2 tbsp sugar in a saucepot. Bring to a boil, then remove from heat - transfer to a heat resistant container. Let sit for 30 mins or overnight. Keep refrigerated. Enjoy.
Lemon Pepper Aioli - combine 1/4 cup mayo (or greek yogurt), 2 tsp lemon pepper seasoning, 1 tsp lemon juice, 1 tsp onion powder. Keep refrigerated. Enjoy.
