Rollin' Rollin' Rollin'

Lasagna roll-ups are a little more time consuming than just a regular  pan of lasagna...but oh so fun to make. Plus, making lasagna roll-ups lets me recruit help from The Kid  (my oldest so), he loves helping me cook - plus its my hack t get him to try new things. For some reason I can get him to eat more veggies, if he assists with cooking them. Feel free to take notes. 

Stuff You Need

PREP - 25 mins                                         

COOK - 45 to 50 mins                              

SERVINGS - 4 to 6

  • 12 lasagna noodles, prepared according to package 
  • 16oz Alfredo Sauce 
  • 7 oz Ricotta Cheese 
  • 1 egg 
  • 1lb Mozzarella, shredded 
  • 1lb Parmesan, shredded 
  • 1/2 C Italian Seasoning, divided 
  • 1 Tbsp BOSSY Blend
  • 2 C Fresh Spinach 
  • 2 C Mushrooms, chopped 
  • 1/4 C Onion, diced 
  • 1 Tbsp Garlic, minced 
  • 2 Tbsp Brown Sugar 
  • 2 Tbsp Grapeseed Oil or Olive Oil

salt + pepper, to taste



Preheat oven to 350ºF 

In a sauté pan, heat oil and cook onions until translucent. Add mushrooms, garlic, brown sugar, and 1/2 BOSSY blend Cook for about 3-4 mins or until caramelized. Set Aside. 

 In a small bowl, combine ricotta cheese, egg, remaining 1/2 of BOSSY blend. Set Aside.

Spray a 9x13 baking pan with non-stick spray. Now cover the bottom of the pan with a thin layer of alfredo sauce. 


On a clean surface lay flat each lasagne noodle. Then spread about a 1 tablespoon of the ricotta mixture over each noodle. Next, a layer of spinach, Then a layer of mushrooms, Then some mozzarella and parmesan. Now roll each noodle as tight lightly as you can. 

Add lasagna roll-ups to prepared pan, placing them seam side down, so they don't unroll.

Top with more alfredo sauce. mozzarella cheese and parmesan cheese.


Bake in oven covered with foil for 30-35 mins. 

 Then make additional 10 mins uncovered. Cheese should be slightly browned on top and bubbling on the sides. 

Let set for about 5 mins before serving. 

 Serve hot with salad and bread.

Recipe NOTEs:

Make Ahead - you can prepare the lasagna noodles the day before and place in the fridge drizzled with a little oil, to prevent sticking. Or you can prepare the whole dish the day before and just place in fridge or freezer until you're ready to bake it in the oven. Just remember to let it thaw out or reach room temperature before baking.
